Ingredients
1 cup cooked boneless skinless chicken breast
½ cup diced tomatoes with green chilies (drained)
½ cup black beans, rinsed and drained
½ cup corn kernels, rinsed and drained
¼ cup cilantro, chopped
½ tsp each: garlic powder, onion powder, cumin
¼ tsp oregano
Salt & pepper, to taste
4 flour tortillas
1 ⅓ cups reduced-fat shredded pepper jack cheese (or any melting cheese) (Slender Kitchen)
How to Make It
Mix the filling: Combine chicken, tomatoes, black beans, corn, cilantro, garlic powder, onion powder, cumin, oregano, salt, and pepper in a bowl.
Heat your skillet: Warm a nonstick pan over medium-high heat.
Assemble quesadillas: Place a tortilla in the pan, sprinkle ~1.5 tbsp cheese on half, add ~½ cup filling, top with ~1.5 tbsp cheese, then fold the tortilla over.
